    Chi Chis twice grilled bbq burritos

    List of Ingredients


    • Marinade for burritos:
    • 1/3 c. water
    • 1/4 c. lime juice
    • 1 lg. clove garlic grated
    • 2 tbsp. veg. oil
    • 2 tsp. vinegar
    • 2 tsp. soy sauce
    • 1/2 tsp. liquid smoke
    • 1/2 tsp. chili powder
    • 1/2 tsp. cayenne
    • 1 tsp. salt
    • 1/4 tsp. pepper
    • dash onion powder
    • Filling:
    • 1 lb chicken
    • 1 red pepper
    • 1 green pepper
    • 1 spanish onion
    • 1 c. cheddar or jack cheese
    • 2 tbsp. veg. oil
    • 2 flour tortillas
    • 3 tbsps. bullseye bbq sauce


    Instructions


    1. Combine all in small bowl. Set aside 1/4 c. of the marinade and store in fridge until needed. Marinate chicken several hours overnight is best.

    2. Grill chix on a bbq or indoor grill 4 - 5 min. per side until done.

    3. For filling. While chicken is cooking saute peppers and onions in oil over high heat. When tender add 1/4 c. marinade you saved to the veggies. Saute until browned. When chicken is done cut into slices no more than 1/2 inch thick or 1/2 inch wide. Keep grill on.

    4. Lay tortillas in hot pan over low heat to make warm. Turn as they heat up. Put each tortilla on a plate and fill each one with equal portions of chicken. Postion chicken near bottom of tortillas about 1 inch margin. Take 1/2 sauteed peppers and onions. Lay veggies on chicken in each tortilla. Add cheese. Roll up burritos by folding bottom up and over filling. Fold in the sides and then fold the filling up over twice to make a neat package.

    5. Rub 1 tbsp. oil over entire surface of each burrito. Put them seam side down on grill at med heat 1-2 min.

    6. When bottom begins to char turn over. Grill top of burrito 1-2 min. more. Put on plate.

      Coat top of each burrito with 1-1 1/2 tbsps bbq sauce. Serve with remaining onion mix.
