    Chicken Enchilada Bake

    List of Ingredients


    • 8 flour tortillas
    • 1/2 c. sour cream
    • 2 tbsp. oleo
    • 1 can cr. of chicken
    • 1/2 c. chopped onion
    • 1/4 c. milk
    • 1 clove garlic minced
    • 1 1/2 cubed cooked chicken
    • 1 c. shredded cheddar
    • 1 can diced green chiles


    Instructions


    1. Heat oven to 350 degrees. In saucepan melt oleo and saute onion and garlic until tender. Stir in green chiles, sour cream and soup. Mix well. Set aside 3/4 c. soup mix.
    2. To remaining sauce in pan stir in chicken and 1/2 c. cheese. Warm tortillas. Fill each tortilla with chicken mix. Roll up. Place seam side down in ungreased 12 X 8 inch baking dish. In small bowl combine reserved 3/4 c. soup mix and milk. Spoon over tortillas. Bake 30-35 mins. To serve sprinkle with remaining cheese.
