    List of Ingredients


    • 3 lb chicken pieces
    • salt, pepper, paprika
    • 2 tbsp. butter
    • 3/4 lb pork sg.
    • 3/4 c. sliced celery
    • 3/4 c. sliced green onions
    • 3 c. cooked rice
    • 1 can mexicorn
    • 2 tsp. lemon juice


    Instructions


    1. Heat oven to 350 degrees. Season chicken with spices. In skillet melt butter. Add chicken. Brown well. Drain chicken on towels. Set aside. Cook sg., celery and onions in some skillet over med. high heat until veg. are crisp and tender. Add rice, corn and lemon juice. Mix well. Pour into baking dish. Arrange chicken on top of rice. Mix pressing slightly into into rice. Cover with foil Bake 30-40 mins.
