Mexican Chicken Alfredo

- 1 pkg spiral pasta
- 2 lb. chicken breasts cubed
- 1 onion chopped
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tbsp oil
- 2 jars alfredo sauce
- 1c. parmesan
- 1 c. salsa
- 1/4 c. milk
- 2tsp. taco seasoning
Instructions
- Cook pasta. In skillet cook chicken, onion, salt and pepper. Stir in alfredo sauce and bring to a boil. Stir in cheese, salsa, milk and taco seasoning.
- Drain pasta. Toss with chicken mix. Divide between two greased 8 inch pans.
- Freeze one cook the other at 350 degrees 30-35 mins.
- To use frozen casserole thaw in fridge overnight. Remove 30 mins. before baking. Cover and bake at 350 degrees 50-60 mins.
