Skillet Chicken Enchiladas

List of Ingredients
- 1 lb chicken breasts chopped
- 2 c. shredded pepper jack divided
- 1 can enchilada sauce divided
- 1/2 c. salsa
- 8 tortillas
- 2 c. shredded lettuce
- 1/2 c. sour cream
Instructions
- Spray a lg. skillet with pam. Heat on med. high heat. Add Chicken. Cook stirring 4-5 min. Reduceheat to low. Add 1/2 the enchilada sauce, salsa and 1/2 the cheese.
- Cook stirring until cheese is melted.
- Place 1/4 c. chicken mix in center of each tortilla. Roll up.
- Arrange each enchilada on a dish seam side down. Heat remaining enchilada sauce in skillet unti hot. Pour over enchiladas. Serve with lettuce and cheese.
