    Skillet Chicken Enchiladas

    List of Ingredients


    • 1 lb chicken breasts chopped
    • 2 c. shredded pepper jack divided
    • 1 can enchilada sauce divided
    • 1/2 c. salsa
    • 8 tortillas
    • 2 c. shredded lettuce
    • 1/2 c. sour cream


    Instructions


    1. Spray a lg. skillet with pam. Heat on med. high heat. Add Chicken. Cook stirring 4-5 min. Reduceheat to low. Add 1/2 the enchilada sauce, salsa and 1/2 the cheese.

    2. Cook stirring until cheese is melted.

    3. Place 1/4 c. chicken mix in center of each tortilla. Roll up.

    4. Arrange each enchilada on a dish seam side down. Heat remaining enchilada sauce in skillet unti hot. Pour over enchiladas. Serve with lettuce and cheese.
