    List of Ingredients


    • 1 tsp. each sage, thyme, rosemary and marjoram
    • 1 tsp. salt
    • 1 tsp. pepper
    • 1 loin pork roast bone in
    • 4 med. tart apples cut in 1 inch cubes
    • 3 tbsp. brown sugar
    • 1 c. apple juice
    • 2/3 c. maple syrup


    Instructions


    1. Combine herbs, salt and pepper. Rub over roast. Cover and refrigerate several hours. Bake uncovered at 325 degrees 1 1/2 hours.

    2. Drain fat. Mix apples and onions with brown sugar. Spoon around roast. Continue to roast 1 hour. Transfer roast, apples and onions to platter.

    3. Skim excess fat from meat juices. Pour into a heavy skillet or leave in roasting pan. Add apple juice and syrup.
    4. Cook and stir over med. high heat until liquid has been reduced by half.
