Herbed Pork and Apples

List of Ingredients
- 1 tsp. each sage, thyme, rosemary and marjoram
- 1 tsp. salt
- 1 tsp. pepper
- 1 loin pork roast bone in
- 4 med. tart apples cut in 1 inch cubes
- 3 tbsp. brown sugar
- 1 c. apple juice
- 2/3 c. maple syrup
Instructions
- Combine herbs, salt and pepper. Rub over roast. Cover and refrigerate several hours. Bake uncovered at 325 degrees 1 1/2 hours.
- Drain fat. Mix apples and onions with brown sugar. Spoon around roast. Continue to roast 1 hour. Transfer roast, apples and onions to platter.
- Skim excess fat from meat juices. Pour into a heavy skillet or leave in roasting pan. Add apple juice and syrup.
- Cook and stir over med. high heat until liquid has been reduced by half.
