Scalloped Potatoes

- 2 tbsp. oleo
- 1 tbsp. flour
- 1 1/2 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 c. thin sliced potatoes
- 1 onion chopped
- 1 green pepper chopped
- buttered bread crumbs
- shredded cheddar
Instructions
- In pan melt oleo. Stir in flour. Add milk. Stir.
- Constantly cook and stir over low heat until thickened and bubbly.
- Season with salt and pepper.
- In greased 1 1/2 qt. baking dish arrange half the potatoes, half the onions, half the green peppers.
- Cover with sauce and repeat layers. Cover and bake at 350 degrees 35 min. Sprinkle with crumbs.
- Bake uncovered 40 min. more. Sprinkle with cheese. Let stand 5 min.
