    Mexican Monterey Chicken

    List of Ingredients


    • 2 lb. chicken breasts
    • 4 oz jack cheese
    • 1 can green chiles
    • 2 c. crushed cracker crumbs
    • 1 pkg. taco seasoning


    Instructions


    1. Pound chicken breasts until about 1/4 inch thick. Heat oven to 350 degree. Lightly grease a 13 x 9 inch pan. Divide jack cheese slices among the chicken breasts along with green chiles. Roll each breast tight and secure with a toothpick. Combine crushed cracker with taco seasoning in shallow pan. Press crumb mix onto chicken rolls and place in pan. Sprinkle any remaining crumbs on top. Then bake 30 min.
