    List of Ingredients


    • 2 tbsp. oleo
    • 1/2 c. chopped onion
    • 1/2 tsp. thyme
    • 1/2 tsp. white pepper
    • 1/4 tsp. cayenne
    • 2 1/2 c. chicken broth
    • 1/2 c. beer
    • 3 tbsp. cornstarch divided
    • 1 c. heavy cream
    • 3 c. shredded colby cheese
    • 1 tsp. hot sauce


    Instructions


    1. Melt butter in lg. pot Add onion, thyme, and peppers. Cook until onions are tender 3-4 mins. Combine broth, beer and 2 tbsp. corn starch stirring until cornstarch is dissolved. Add to pot and bring to a boil. Reduce heat. Simmer 5 mins. Add cream. Toss cheese with 1 tbsp. cornstarch. Gradually add cheese to soup stirring until melted before adding more cheese. Add hot sauce. Serve.
