    Chicken and Three Pepper Corn Chowder

    List of Ingredients


    • 2 tbsp. butter
    • 3 c. frozen pepper and onion stir fry
    • 1 lg. clove garlic minced
    • 1 lb chicken breasts
    • 2 c. frozen corn
    • 1 c. chicken broth
    • 1/8 tsp. cayenne
    • 8 oz velveeta
    • 1/2 c. whipping cream
    • 1 tbsp. chopped fresh cilantro


    Instructions


    1. In lg. pan melt butter over med. heat. Add veggies except garlic cook and stir 5 - 7 min. Add garlic and stir 30 seconds. Remove veggies from skillet. Set aside.

    2. Add chicken, corn, broth and cayenne. Bring to a boil. Reduce heat. Cover and simmer 5 min. Add cheese and cream to chicken mix. Cook and stir until cheese is melted. Stir in cilantro.
