Key Lime Pie

List of Ingredients
- 1 1/4 cups graham cracker crumbs
- 1/4 cup ground almonds
- 6 T butter
- 1/4 cup sugar
- 1/2 cup juice from Key limes (ordinary limes can be used)
- 1 1/2 T grated lime zest (use outer, greenest part)
- 1 can sweetened condensed milk
- 4 egg yolks
- 1/2 pint heavy cream whipped with a few drops vanilla
Instructions
- For crust, blend first 4 ingredients until mixture is uniform, crumbly but malleable.
- Press into pie pan in a 1/4 inch layer, spreading evenly over bottom of pan and up sides.
- Bake 5 - 6 minutes at 375 degrees before filling.
- For filling, add lime juice and zest to condensed milk and blend well.
- Beat in egg yolks and continue to beat until mixture thickens slightly.
- Pour into baked crust and bake 10 minutes at 350 degrees, or until fillng has set.
- Refrigerate until cool and top with whipped cream.
