    List of Ingredients


    • 4 egg whites
    • 1/4 tsp cr. of tartar
    • 1 c sugar
    • 4 egg yolks
    • 4 T lemon juice
    • 1/2 c sugar
    • 1/4 c water
    • grated lemon rind
    • 1/2 pt. whipping cream


    Instructions


    1. Beat egg whites until frothy.
    2. Add cr. of tartar
    3. Continue beating until stiff, gradually adding sugar until glossy.
    4. Butter large pie pan. Add meringue, building up on sides.

    5. Bake at 270 degrees or 1 hr. Cool.
    6. Filling: Beat egg yolks until lemon colored
    7. Add lemon juice, sugar, water, and lemon rind.
    8. Cook over hot water until thick. Cool.
    9. Whip cream. Layer meringue shell with whipped cream, then lemon filling.
    10. Cover and refrigerate.


    Final Comments


    Serves a minimum of 8 people. Keeps 1 or 2 days.
