Lemon Angel Pie

- 4 egg whites
- 1/4 tsp cr. of tartar
- 1 c sugar
- 4 egg yolks
- 4 T lemon juice
- 1/2 c sugar
- 1/4 c water
- grated lemon rind
- 1/2 pt. whipping cream
Instructions
- Beat egg whites until frothy.
- Add cr. of tartar
- Continue beating until stiff, gradually adding sugar until glossy.
- Butter large pie pan. Add meringue, building up on sides.
- Bake at 270 degrees or 1 hr. Cool.
- Filling: Beat egg yolks until lemon colored
- Add lemon juice, sugar, water, and lemon rind.
- Cook over hot water until thick. Cool.
- Whip cream. Layer meringue shell with whipped cream, then lemon filling.
- Cover and refrigerate.
Final Comments
Serves a minimum of 8 people. Keeps 1 or 2 days.
