Orange and Fennel salad

dried cherries
oranges, peeled and sectioned into pieces without ribs
fennel bulb, white part sliced thinly (one fennel bulb per two people typically)
pear (firm pear, we use asian pear), thinly sliced
olive oil (high grade extra virgin olive oil)
blood orange vinegar
red sea salt
Recipe
Combine sliced oranges, fennel bulb, and pear. Mix and add a handful of dried cherries. Make a light vinagrette using 3 parts oil to one part vinegar. Sprinkle salad lightly with sea salt and serve.
