Summer Veggie Salad

List of Ingredients
- 1 can Shoe Peg corn
- 1 can of small peas
- 1 can french style green beans
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped green peppers
- 1 small jar pimentos
- 3/4 cup cider vinegar
- 1/2 cup oil
- 1/2 cup sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 T water
Instructions
- Drain vegetables, discarding liquid.
- Add remaining vegetables.
- Bring remaining ingredients to a boil. Cool.
- Mix all together and refrigerate.
Final Comments
Keeps well for two weeks. This recipe has become a family favorite and is a nice change from three bean salad.
