    Summer Veggie Salad

    List of Ingredients


    • 1 can Shoe Peg corn
    • 1 can of small peas
    • 1 can french style green beans
    • 1 cup chopped onions
    • 1 cup chopped celery
    • 1 cup chopped green peppers
    • 1 small jar pimentos
    • 3/4 cup cider vinegar
    • 1/2 cup oil
    • 1/2 cup sugar
    • 1 tsp. salt
    • 1/2 tsp. pepper
    • 1 T water


    Instructions


    1. Drain vegetables, discarding liquid.

    2. Add remaining vegetables.

    3. Bring remaining ingredients to a boil. Cool.

    4. Mix all together and refrigerate.



    Final Comments


    Keeps well for two weeks. This recipe has become a family favorite and is a nice change from three bean salad.
