Canned Spaghetti Sauce

Recipe Introduction
This makes 10 pints, if canned, or reduce recipe to make desired amount.
List of Ingredients
- 16 lbs. tomatoes, peeled & diced
- 4 medium onions, diced
- 4 garlic cloves, minced
- 1/4 cup chopped parsley or 2 T parsley flakes
- 2 - 12 oz. cans tomato paste
- 1/4 cup sugar
- 2 T oregano
- 2 T basil
- 3/4 tsp. pepper or peppercorns
- 1/2 cup salad oil
- 2 T salt
- 2 bay leaves
Instructions
- Heat oil; add garlic $ onion; cook until tender.
- Add remaining ingredients.
- Heat to boiling point; reduce heat and cook partially covered until thick.
- Discard bay leaves.
- Can in hot, sterilized jars.
- Mix with browned ground beef, if desired, and serve over spaghetti.
Final Comments
Sauce can also be frozen in smaller quantities for quick meals.
