List of Ingredients
- 3 quarts peeled, chopped tomatoes
- 3 cups chopped celery
- 2 cups chopped onions
- 1 cup chopped green pepper
- 1/4 tsp. salt
- 1 cup white vinegar
- 2 cups sugar
- 1/4 cup brown sugar
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. pickling spices
Instructions
- Combine first 5 ingredients; let stand overnight.
- Drain, but do not press out liquid.
- Add remaining ingredients tomato mixture and bring to a boil.
- Simmer 15 minutes, uncovered.
- Fill pint jars and can in hot water bath for 10 minutes.
Final Comments
Instead of canning, cook mixture longer and refrigerate. Makes about 5 1/2 pints.
