    List of Ingredients


    • 4 boneless chicken breast halves; cooked & shredded
    • 2 (14.5) oz. cans chicken broth
    • 1 (4 oz) can diced green chilis
    • 1 (10 oz) can diced tomatoes with green chili peppers
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 T fresh lime juice
    • 2 T chopped fresh cilantro
    • 1/2 tsp ground cayenne pepper
    • 1/2 tsp ground cumin
    • 4 (10inch) flour tortillas
    • 1 T olive oil


    Instructions


    1. Combine chicken broth, green chilies, tomatoes with green chilies, onion, & garlic in soup pot.
    2. Add shredded chicken.
    3. Bring to boil, stirring frequently.
    4. Reduce heat & simmer for 30-35 minutes.
    5. Add lime juice, cilantro, cayenne, & cumin. Simmer for 10-15 minutes longer.
    6. Cut tortillas into 1/2 x 2 inch strips. Fry in hot olive oil in skillet until golden brown; drain on paper towels.
    7. Ladle soup into bowls.
    8. Garnish with shredded Monterey Jack Cheese and tortilla chips.


    Final Comments


    This is the best soup for a sore throat and nasal congestion!
