Chicken Tortilla Soup

List of Ingredients
- 4 boneless chicken breast halves; cooked & shredded
- 2 (14.5) oz. cans chicken broth
- 1 (4 oz) can diced green chilis
- 1 (10 oz) can diced tomatoes with green chili peppers
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 T fresh lime juice
- 2 T chopped fresh cilantro
- 1/2 tsp ground cayenne pepper
- 1/2 tsp ground cumin
- 4 (10inch) flour tortillas
- 1 T olive oil
Instructions
- Combine chicken broth, green chilies, tomatoes with green chilies, onion, & garlic in soup pot.
- Add shredded chicken.
- Bring to boil, stirring frequently.
- Reduce heat & simmer for 30-35 minutes.
- Add lime juice, cilantro, cayenne, & cumin. Simmer for 10-15 minutes longer.
- Cut tortillas into 1/2 x 2 inch strips. Fry in hot olive oil in skillet until golden brown; drain on paper towels.
- Ladle soup into bowls.
- Garnish with shredded Monterey Jack Cheese and tortilla chips.
Final Comments
This is the best soup for a sore throat and nasal congestion!
