List of Ingredients
1/4 cup of butter
2-1/2 cups thinly sliced onions (2 large onions)
2-14 oz. cans beef broth
1/4 cup of sherry or dry white wine
1 tsp. Worcestershire sauce
1/4 tsp. ground black pepper
4-1/2 inch slices of French bread toasted
2/3 cups of shredded Swiss, Gruyere or Jarisberg cheese
Recipe
In a 3 quart saucepan melt butter. Add onion and cook over medium to low heat for 13 to 15 minutes or until tender, stirring occasionally.
Stir in broth, sherry or wine, Worcestershire sauce and pepper. Bring to a boil and reduce heat. Simmer covered for 15 minutes.
Meanwhile, pre-heat broiler. Line a baking sheet with foil and arrange bread slices. Broil 4-5 inches from heat for 2-3 minutes or until toasted, turning once. Sprinkle with cheese and broil for 2-3 minutes more or until cheese melts and is light brown.
To serve, ladle soup into bowls topping each with a bread slice. Makes 4 main dish servings.
