Spicy Zucchini Boats

- 4 Small Zucchini
- 4 ounces of cream cheese, softened
- 1/2 cup (2 ounces) shredded pepper jack cheese
- 1/2 cup shredded Parmesan cheese
- 1/4 teaspoon cayenne pepper
- 1 teaspoon dried chives
Instructions
- Preheat oven to 350 degrees. Slice zucchini in half lengthwise to make boats.
- Blanch zucchini in boiling, salted water, 2 minutes. Drain, then immediately immerse zucchini in an ice bath.
- Drain thoroughly; blot excess water with paper towels.
- Using knife or small spoon, carefully hollow out zucchini by removing some of its pulp. (Leave at least a 1/4 inch wall.)
- Combine cheeses, cayenne pepper and chives in mixing bowl.
- Stuff zucchini with cheese mixture. Place in lightly-greased baking dish.
- Bake until squash is heated through and cheese is melted, 8 to 10 minutes.
- Makes 4 (2-piece) servings.
