    Recipe Introduction


    These were Grandma Emma's favorite sweet pickles.


    List of Ingredients


    • 1 1/2 gallon small pickles or gerkins
    • 1/4 cup pickling salt
    • Water
    • 2 quarts vinegar
    • 1 T alum
    • 4 quarts sugar
    • 2 tsp. picking spices


    Instructions


    1. Wash and cut pickles.
    2. Add pickling salt to 1 1/2 gallon water. Soak for 3 days.
    3. Drain and rinse pickles in clear water. Soak in water for 24 hours. Drain.
    4. Boil 1 quart vinegar, 1 quart water, 1 T alum. Pour over pickles.
    5. Let stand for 2 days.
    6. Drain and discard liquid.
    7. Boil 1 quart vinegar, 1 quart sugar, and pickling spices.
    8. Pour over pickles; let stand 1 day.
    9. Drain and retain liquid. Add 1 quart sugar to liquid for 3 days; heating syrup daily.


    Final Comments


    Pickles are usually made in a big crock and canned.
