Hash Brown Casserole

List of Ingredients
- 12 eggs
- 1 can (12 ounces) evaporated milk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cayenne pepper, optional
- 1 package (30 ounces) frozen shredded hash brown potatoes, thawed.
- 2 cups (8 ounces) shredded cheddar cheese
- 1 large onion, chopped
- 1 medium green pepper, cored, seeded and chopped
- 1 cup fully cooked ham
Instructions
- In a large bowl, combine the eggs, milk, salt, pepper and cayenne if desired. Stir in the potatoes, cheese, onion, green pepper and ham. Pour into a greased 13x9x2 inch baking dish. Bake, uncovered, at 350* for 45-50 minutes or until a knife inserted near the center comes out clean.
Yield: 12-15 servings
