Apple Butter Muffins

Recipe Introduction
These muffins do not rise quite as high as muffins made with all white flour; therefore, the muffin cups can be filled almost to the top.
List of Ingredients
- 1 & 1/3 cups white flour
- 2/3 cup whole wheat flour
- 1/4 tsp baking soda
- 1 & 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp ground ginger
- 3/4 cup apple butter
- 1/2 cup applesauce
- 1/4 cup milk
- 2 large eggs, lightly beaten
- 3 Tbl wildflower honey
- 1 tsp pure vanilla extract
- 3/4 cup plump baking rasins
Instructions
- Pre-heat oven to 400 degrees.
- Combine dry ingredients (first 8) in a large bowl. Make a well in the center of the dry ingredients.
- Mix remaining ingredients (except raisins) in a bowl. Add wet ingredients to dry ingredients.
- Mix by hand until wet ingredients are just combined into dry ingredients (approx. 10-15 strokes). Do not overmix.
- Fold in raisins.
- Line 12 cup muffin tin with paper liners. Spoon batter into paper liners.
- Bake 20-25 minutes. Do not let muffins cool in pan for more than 2 or 3 minutes before taking them out to cool on a wire rack.
- Optional..a pinch of sugar may be sprinkled on the top of each muffin prior to baking.
