    Banana Maple Nut Bread

    List of Ingredients


    • 1 Cup white sugar
    • 1/2 Cup butter
    • 2 Large eggs
    • 1 tsp maple flavoring
    • 2 Large bananas, mashed
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp freshly grated nutmeg
    • 1/2 tsp salt
    • 1 Cup walnuts or pecans
    • 3/4 Cup chopped, dried apricots


    Instructions


    1. Pre-heat oven to 350 degrees. Butter and flour a 9x5x3" loaf pan. Measure dry ingredients into a bowl.

    2. Cream butter and sugar until light and fluffy. Add eggs and maple flavoring. Mix well.

    3. Add bananas and mix well.

    4. Add dry ingredients and mix until dry ingredients are just blended in. Do not overmix.

    5. Fold in apricots and walnuts.

    6. Pour batter into prepared loaf pan. Bake 60 to 70 minutes or until toothpick inserted into middle of loaf comes out clean.

    7. Sprinkle top of batter with additional sugar prior to baking if desired.

    8. Cool in pan 10 minutes. Turn loaf out of pan and cool on wire rack away from drafts.

    9. When loaf is completely cool, wrap tightly in foil. Let rest in foil at room temperature overnight before slicing and eating.
