Banana Maple Nut Bread

List of Ingredients
- 1 Cup white sugar
- 1/2 Cup butter
- 2 Large eggs
- 1 tsp maple flavoring
- 2 Large bananas, mashed
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/2 tsp salt
- 1 Cup walnuts or pecans
- 3/4 Cup chopped, dried apricots
Instructions
- Pre-heat oven to 350 degrees. Butter and flour a 9x5x3" loaf pan. Measure dry ingredients into a bowl.
- Cream butter and sugar until light and fluffy. Add eggs and maple flavoring. Mix well.
- Add bananas and mix well.
- Add dry ingredients and mix until dry ingredients are just blended in. Do not overmix.
- Fold in apricots and walnuts.
- Pour batter into prepared loaf pan. Bake 60 to 70 minutes or until toothpick inserted into middle of loaf comes out clean.
- Sprinkle top of batter with additional sugar prior to baking if desired.
- Cool in pan 10 minutes. Turn loaf out of pan and cool on wire rack away from drafts.
- When loaf is completely cool, wrap tightly in foil. Let rest in foil at room temperature overnight before slicing and eating.
