Reduced Fat Applesauce Spice Cake

- 2 1/4 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 cup brown sugar, firmly packed
- 1/2 cup extra light olive oil
- 1 1/2 cups applesauce
- 1 cup raisins
- 1 cup chopped walnuts
Instructions
- Pre-heat oven to 375 degrees (350 for dark pan). Grease a 9" square cake pan with extra light olive oil or spray with vegetable spray. Set aside.
- In a medium-sized bowl combine flour, baking soda and spices.
- In a large bowl cream brown sugar and olive oil until mixture is well blended. Add applesauce and mix well.
- Add flour/spice mixture and beat with electric mixer at low spead, increasing speed until mixture is well combined. Stir in nuts and raisins.
- (I like to toast the nuts for about 10 minutes while the oven is heating and also plump raisins mixed with some water or apple juice, etc. in a small pan on stove top. Heat raisin and liquid mixture for a few minutes until mixture comes to a boil. Drain liquid and cool raisins prior to adding to cake batter.)
- Spread batter evenly into prepared 9" cake pan.
- Bake 20-25 minutes or until toothpick inserted into middle of cake comes out clean.
- Cool on rack in pan 10 minutes. Run table knife around edge of cake before turning out of the pan.
