Spiced Applesauce Cake

Recipe Introduction
This cake is better the 2nd or 3rd day after baking. Although I've yet to try using grated orange peel in this recipe, I'm thinking an addition of that ingredient would be good in this cake.
List of Ingredients
- 1 3/4 cup sifted white all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 3/4 tsp strong flavored cinnamon
- 1/2 tsp ground cloves
- 1 tsp ground ginger
- 1 tsp freshly grated nutmeg
- 1/2 cup butter, room temperature
- 1 cup packed dark brown sugar
- 2 large eggs, room temperature
- 1 cup unsweetened applesauce, room temperature
- 1 cup plump baking raisins
- 1 cup walnut pieces
Instructions
- Pre-heat oven to 350 degrees & lightly spray 9x13" glass baking dish with vegetable spray.
- Sift together dry ingredients.
- Cream butter and sugar. Add eggs one at a time, beating after each addition.
- Add 1/4 flour and mix. Add 1/4 applesauce and mix. Continue until all dry ingredients and applesauce are mixed into batter.
- Stir in nuts and raisins.
- Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted into center of cake comes out clean.
- Cool on wire rack.
