    Sausage & Potato Casserole

    List of Ingredients


    • 1 1/2 lb pork sausage
    • 1 large onion, diced
    • 5-6 medium-sized red boiling potatoes
    • 1 Tbl white vinegar
    • 1 large family-sized can cream of chicken soup
    • 1 1/4 cups milk
    • 2 cups shredded Cheddar cheese


    Instructions


    1. Heat oven to 350.

    2. Peel potatoes and slice 1/4" thick. Put into a 3 qt pot of salted water. Add one tablespoon of vinegar to help prevent potatoes from breaking up after they are cooked. Cook potatoes until just tender. Drain.

    3. Brown sausage with onion. Drain well.

    4. Mix soup with milk. Stir until smooth.

    5. Place a layer of potatoes into a 9x13 buttered baking dish. Add a layer of sausage. Repeat.

    6. Pour soup mixture over potatoes and sausage.

    7. Top with grated cheese.

    8. Bake 30-45 minutes until casserole is hot and bubbly and as brown as you'd like to have it on the top.

    9. Serves 6 people with regular jobs or 4 hungry farmhands or 3 teenage boys.



    Final Comments


    This is good in the Fall served with baked acorn squash haves. Be sure to fill the squash cavities with butter and brown sugar and some apple pie spice before removing from the oven.
