    Quick, easy & not so expensive to feed a crowd


    List of Ingredients


    • 1.5 lb ground round
    • 2 cups uncooked macaroni
    • 1 large onion, chopped
    • 1 15 oz can mushroom stems & pieces, drained
    • 1 32 oz jar pasta sauce*
    • Italian sasoning to taste
    • 2 cups cottage cheese, large or small curd
    • 2 large eggs, beaten
    • salt & pepper to taste
    • 4 oz grated Parmesan cheese
    • 1 lb fresh Mozzarella cheese**


    Instructions


    1. Cook macaroni in boiling, salted water until it is cooked but still a little bit firm. Drain & rinse with cold water.
    2. Brown ground round with mushrooms & onion & drain fat.
    3. In a large bowl mix ground beef & macaroni with all remaining ingredients except Mozzarella.
    4. Pour mixture into a greased 9x13 baking dish.
    5. Top with sliced Mozzarella cheese.
    6. Bake at 350 degrees for 30 minutes or until mixture is cooked throughout and cheese is melted and beginning to brown somewhat.


    Final Comments


    * Any flavor of pasta sauce will work. Roasted pepper with onion is a good choice.
    ** If fresh Mozzarella is not available, regular packaged slices such as Kraft will work also.
