Quick, easy & not so expensive to feed a crowd
List of Ingredients
- 1.5 lb ground round
- 2 cups uncooked macaroni
- 1 large onion, chopped
- 1 15 oz can mushroom stems & pieces, drained
- 1 32 oz jar pasta sauce*
- Italian sasoning to taste
- 2 cups cottage cheese, large or small curd
- 2 large eggs, beaten
- salt & pepper to taste
- 4 oz grated Parmesan cheese
- 1 lb fresh Mozzarella cheese**
Instructions
- Cook macaroni in boiling, salted water until it is cooked but still a little bit firm. Drain & rinse with cold water.
- Brown ground round with mushrooms & onion & drain fat.
- In a large bowl mix ground beef & macaroni with all remaining ingredients except Mozzarella.
- Pour mixture into a greased 9x13 baking dish.
- Top with sliced Mozzarella cheese.
- Bake at 350 degrees for 30 minutes or until mixture is cooked throughout and cheese is melted and beginning to brown somewhat.
Final Comments
* Any flavor of pasta sauce will work. Roasted pepper with onion is a good choice.
** If fresh Mozzarella is not available, regular packaged slices such as Kraft will work also.
