Tuna Noodle Casserole

List of Ingredients
- 1 large can of fancy white albacore packed in spring water, drained
- 1 large onion, diced
- 8 oz fresh mushrooms, cleaned and chopped
- 1 large shallot, chopped
- 3/4 cup butter
- 2 cans cream of mushroom soup
- 1 soup can of half and half
- 1 box frozen pes, thawed and drained
- 1 large jar pimentos, drained
- 10 slices white bread torn into bite-sized pieces
- 16 oz curly egg noodles
Instructions
- Melt 1/4 cup butter in a medium-sized skillet over medium heat. Saute mushrooms and shallot, being careful not to burn the shallot and turn it bitter.
- Cook noodles in boiling salted water. Drain well.
- Melt remianing 1/2 cup butter in a large skillet and saute torn bread pieces making sure all of the bread has butter on it.
- Mix all ingreadients except the bread pieces.
- Pour mixture into a buttered 9x13 baking dish. Top with the buttered bread pieces.
- Bake at 350 for 30-40 minutes.
Final Comments
Serves 6-8.
