    List of Ingredients


    • 1 lb lean ground beef
    • 2 large green pepper, seeded & chopped
    • 1 large onion chopped
    • 2 tsp ground cumin
    • salt & pepper to taste
    • 1 can diced tomatoes with green chilies
    • 1 can ripe olives, drained & sliced
    • 2 small (4 oz) cans diced green chilies
    • 1 can tomato soup
    • 1 can pinto beans, drained
    • crushed corn chips
    • 1/2 lb pepper jack cheese
    • sour cream for serving


    Instructions


    1. Brown ground beef with onion & green pepper. Drain fat.
    2. Mix all ingredients except cheese and corn chips.
    3. Put into greased 9x13" baking dish. Sprinkle 1/2 of the cheese over the top of the casserole. Cover with crushed corn chips. Top with remaining cheese.
    4. Bake at 350 degrees until mixture is hot throughout (approx 30 minutes)
    5. Serve with sour cream
