Pepper Jack Casserole

List of Ingredients
- 1 lb lean ground beef
- 2 large green pepper, seeded & chopped
- 1 large onion chopped
- 2 tsp ground cumin
- salt & pepper to taste
- 1 can diced tomatoes with green chilies
- 1 can ripe olives, drained & sliced
- 2 small (4 oz) cans diced green chilies
- 1 can tomato soup
- 1 can pinto beans, drained
- crushed corn chips
- 1/2 lb pepper jack cheese
- sour cream for serving
Instructions
- Brown ground beef with onion & green pepper. Drain fat.
- Mix all ingredients except cheese and corn chips.
- Put into greased 9x13" baking dish. Sprinkle 1/2 of the cheese over the top of the casserole. Cover with crushed corn chips. Top with remaining cheese.
- Bake at 350 degrees until mixture is hot throughout (approx 30 minutes)
- Serve with sour cream
