PEACH CHUTNEY

List of Ingredients
- 3.5 to 4 lbs ripe freestone peaches, peeled and sliced
- 1/2 cup cider vinegar
- 1/2 cup light brown sugar, loosely packed
- 1/2 cup granulated sugar
- 1 medium yellow onion diced
- 1 large red bell pepper diced into 1/4" pieces
- 3-4 cloves garlic finely minced
- 1-4 oz can chopped green chilies
- 1 cup plumped baking raisins
- 1/2 tsp salt
- 1 tsp ginger powder
- pinch ground cloves
Instructions
- Combine all ingredients except peaches in a non-reactive pan.
- Simmer ingredients for 10 minutes then add peaches & bring to a boil.
- Reduce heat and simmer to reduce liquid somewhat (approx. 10 more minutes)
- Cool. Store in airtight container in refrigerator for up to 1 week.
