    List of Ingredients


    • 3.5 to 4 lbs ripe freestone peaches, peeled and sliced
    • 1/2 cup cider vinegar
    • 1/2 cup light brown sugar, loosely packed
    • 1/2 cup granulated sugar
    • 1 medium yellow onion diced
    • 1 large red bell pepper diced into 1/4" pieces
    • 3-4 cloves garlic finely minced
    • 1-4 oz can chopped green chilies
    • 1 cup plumped baking raisins
    • 1/2 tsp salt
    • 1 tsp ginger powder
    • pinch ground cloves


    Instructions


    1. Combine all ingredients except peaches in a non-reactive pan.
    2. Simmer ingredients for 10 minutes then add peaches & bring to a boil.
    3. Reduce heat and simmer to reduce liquid somewhat (approx. 10 more minutes)
    4. Cool. Store in airtight container in refrigerator for up to 1 week.
