Almond Mocha Butter Drops

- 1 cup butter
- 1 cup sugar, divided
- 1/4 tsp almond extract
- 1 egg
- 2 tsp instant coffee
- 1 Tbl water
- 1/4 cup cocoa
- 1/2 tsp salt
- 1 tsp baking powder
- 2 cups blanched whole almonds
- Extra sugar for sprinkles
Instructions
- Pre-heat oven to 350 degrees.
- In the work bowl of a food processor process 2 cups blanched almonds and 1/4 cup sugar until almonds are chopped. Some will be fine and some coarse, but that's ok. Put chopped almonds into a cake or pie pan and put into the oven to toast. Stir occasionally.
- Cream butter and remaining 3/4 cup of sugar until light and fluffy. Add egg, almond flavor and coffee. Mix well.
- Measure flour, cocoa, salt and baking powder. Add to mixture in the bowl a few tablespoons at a time. Stir in toasted almonds.
- Drop by tablespoonsfull onto a non-stick Air-bake sheet. Sprinkle the top of each cookie with sugar.
- Bake 11 minutes. Leave on baking sheet one or two minutes to cool before moving to a wire rack to cool.
