    Almond Mocha Butter Drops

    List of Ingredients


    • 1 cup butter
    • 1 cup sugar, divided
    • 1/4 tsp almond extract
    • 1 egg
    • 2 tsp instant coffee
    • 1 Tbl water
    • 1/4 cup cocoa
    • 1/2 tsp salt
    • 1 tsp baking powder
    • 2 cups blanched whole almonds
    • Extra sugar for sprinkles


    Instructions


    1. Pre-heat oven to 350 degrees.

    2. In the work bowl of a food processor process 2 cups blanched almonds and 1/4 cup sugar until almonds are chopped. Some will be fine and some coarse, but that's ok. Put chopped almonds into a cake or pie pan and put into the oven to toast. Stir occasionally.

    3. Cream butter and remaining 3/4 cup of sugar until light and fluffy. Add egg, almond flavor and coffee. Mix well.

    4. Measure flour, cocoa, salt and baking powder. Add to mixture in the bowl a few tablespoons at a time. Stir in toasted almonds.

    5. Drop by tablespoonsfull onto a non-stick Air-bake sheet. Sprinkle the top of each cookie with sugar.

    6. Bake 11 minutes. Leave on baking sheet one or two minutes to cool before moving to a wire rack to cool.
