Banana Oatmeal Cookies

Recipe Introduction
These taste like banana bread in cookie form. Put them into a food storage bag and store in the refrigerator. They will keep for a couple of weeks if stored that way.
List of Ingredients
- 1 cup white sugar
- 3/4 cup butter flavored shortening
- 1 egg, slightly beaten
- 3 ripe bananas, mashed
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp freshly grated nutmeg
- 3 cups quick cooking oats
- 1 cup toasted walnut pieces
Instructions
- Pre-heat oven to 350 degrees.
- Measure flour by dip, level & pour method. Mix with soda, salt and spices.
- Cream shortening and sugar until light and fluffy. Add egg and banana and mix well. Add flour, spice mixture a little at a time. Mix until well blended.
- Stir in oats and nuts.
- Use a 1 tablespoon sized scoop and place cookies 2" apart on non-stick Air-bake sheet.
- Bake for 10-12 minutes.
- Remove to wire rack to cool.
Final Comments
Dates or raisins may be substituted for the nuts.
