    Banana Oatmeal Cookies

    Recipe Introduction


    These taste like banana bread in cookie form. Put them into a food storage bag and store in the refrigerator. They will keep for a couple of weeks if stored that way.


    List of Ingredients


    • 1 cup white sugar
    • 3/4 cup butter flavored shortening
    • 1 egg, slightly beaten
    • 3 ripe bananas, mashed
    • 1 1/2 cups flour
    • 1/2 tsp baking soda
    • 1 tsp salt
    • 3/4 tsp cinnamon
    • 1/4 tsp freshly grated nutmeg
    • 3 cups quick cooking oats
    • 1 cup toasted walnut pieces


    Instructions


    1. Pre-heat oven to 350 degrees.
    2. Measure flour by dip, level & pour method. Mix with soda, salt and spices.
    3. Cream shortening and sugar until light and fluffy. Add egg and banana and mix well. Add flour, spice mixture a little at a time. Mix until well blended.
    4. Stir in oats and nuts.
    5. Use a 1 tablespoon sized scoop and place cookies 2" apart on non-stick Air-bake sheet.
    6. Bake for 10-12 minutes.
    7. Remove to wire rack to cool.


    Final Comments


    Dates or raisins may be substituted for the nuts.
