Chocolate Pecan Bars

List of Ingredients
- CRUST
- 1 Cup unsalted butter
- 3 Cups sifted flour
- 1/2 Cup white sugar
- 1 tsp cinnamon
- 1/2 tsp salt
- FILLING
- 1 lb pecan pieces, toasted
- 1 Cup chocolate chips
- 1 1/2 Cup light corn syrup
- 3/4 Cup white sugar
- 2 Tbl butter
- 1/4 Cup very strong coffee
- 4 Large eggs, slightly beaten
- 1 Tbl pure vanilla extract
Instructions
- Pre-heat oven to 350 degrees.
- Put pecan pieces onto a cookie sheet and toast in the oven for 10 to 15 minutes. Stir frequently.
- For the crust: Beat crust ingredients together with flat paddle of a mixer until mixture resembles coarse crumbs.
- Press crust into a 10x15" non-stick baking pan. Bake for 20 minutes.
- Put corn syrup, chocolate chips, sugar, coffee and butter into a 2 1/2 quart non-stick saucepan.
- Cook mixture over low heat, stirring now and then until chocolate and butter are melted and sugar is dissolved.
- Temper eggs by stirring a few spoonsful of the hot chocolate mixture into the eggs.
- Remove pan of chocolate from the heat. Stir tempered eggs back into the chocolate mixture. Add vanilla and stir to combine all.
- Spread toasted pecans over the baked crust. Pour chocolate mixture evenly over the pecans.
- Return to the oven and bake for an additional 30 minutes or until mixture is set.
- Cool before cutting into squares.
