    List of Ingredients


    • CRUST
    • 1 Cup unsalted butter
    • 3 Cups sifted flour
    • 1/2 Cup white sugar
    • 1 tsp cinnamon
    • 1/2 tsp salt
    • FILLING
    • 1 lb pecan pieces, toasted
    • 1 Cup chocolate chips
    • 1 1/2 Cup light corn syrup
    • 3/4 Cup white sugar
    • 2 Tbl butter
    • 1/4 Cup very strong coffee
    • 4 Large eggs, slightly beaten
    • 1 Tbl pure vanilla extract


    Instructions


    1. Pre-heat oven to 350 degrees.
    2. Put pecan pieces onto a cookie sheet and toast in the oven for 10 to 15 minutes. Stir frequently.
    3. For the crust: Beat crust ingredients together with flat paddle of a mixer until mixture resembles coarse crumbs.
    4. Press crust into a 10x15" non-stick baking pan. Bake for 20 minutes.
    5. Put corn syrup, chocolate chips, sugar, coffee and butter into a 2 1/2 quart non-stick saucepan.
    6. Cook mixture over low heat, stirring now and then until chocolate and butter are melted and sugar is dissolved.
    7. Temper eggs by stirring a few spoonsful of the hot chocolate mixture into the eggs.
    8. Remove pan of chocolate from the heat. Stir tempered eggs back into the chocolate mixture. Add vanilla and stir to combine all.
    9. Spread toasted pecans over the baked crust. Pour chocolate mixture evenly over the pecans.
    10. Return to the oven and bake for an additional 30 minutes or until mixture is set.
    11. Cool before cutting into squares.
