    Recipe Introduction


    Mrs. Oxley gave my mother this recipe in 1955. Mrs. Oxley is 93 years young and still baking these scrumptious cookies.


    List of Ingredients


    • 1 cup white sugar
    • 1 cup brown sugar
    • 2/3 cup Crisco
    • 2 large eggs
    • 1 cup shredded coconut
    • 1 tsp. baking soda dissolved in 2 Tbl. water
    • 1 1/2 cups rolled oats
    • 1 tsp. baking powder
    • 2 cups flour


    Instructions


    1. Pre-heat oven to 350 degrees.
    2. Beat Crisco and sugars until light and fluffy.
    3. Add eggs, vanilla and baking soda dissolved in water. Beat well.
    4. Measure flour and baking soda and add to batter, one cup at a time, mixing well after each addition.
    5. Stir in coconut and oats.
    6. Drop by tablespoon onto a greased cookie sheet (or onto a non-stick Air-Bake sheet) and bake until lightly browned, 8-10 minutes.


    Final Comments


    The instructions say this recipe makes 5 dozen cookies, but don't believe it. It doesn't.
