    Crockpot Cranberry Pork Loin

    This is good served with thyme & saffron scented rice


    List of Ingredients


    • 1 Boneless pork loin
    • Salt & Pepper to taste
    • 1/4 Cup brown sugar (not packed)
    • 1 15 oz can whole cranberry sauce
    • 1/4 Cup cranberry juice
    • 1 tsp dry mustard
    • 1/4 tsp ground cloves
    • 2 Tbl cornstarch
    • 4 Tbl cold water


    Instructions


    1. Wash loin under hot, running water and dry with paper towels. Salt & pepper to taste.
    2. Place loin, fat side down, in 4 1/2 or 5 quart crockpot.
    3. Mix cranberry sauce, cranberry juice, brown sugar, dry mustard and cloves. Pour over roast.
    4. Cover crockpot and cook on low for 8 hours or until roast is tender.
    5. Remove roast from corckpot and keep warm. Skim fat from pan juices.
    6. Pour pan juices into a saucepan and bring to a boil.
    7. Mix 2 Tbl cornstarch with 4 Tbl of cold water and add to the boiling pan juices. Cook, stirring, until sauce has thickened.
    8. Serve sauce over roast.
