    Alberta's Frozen Lemon Dessert

    A mother-in-law's recipe box


    List of Ingredients


    • 2 large lemons
    • 1 Tbl grated lemon rind
    • 1 cup sugar (scant)
    • 1 egg, separated
    • 1/2 pint whipping cream
    • 1 prepared graham cracker crust or make your own


    Instructions


    1. Combine egg yolk, lemon juice, grated rind and sugar. Cook stirring constantly over medium heat until mixture comes to a boil. Boil 1 minute to thicken.

    2. Set mixture aside to cool.

    3. Beat egg white until stiff and fold into cooled lemon-sugar mixture.

    4. Whip cream until stiff and fold into the above mixture.

    5. Pour into a prepared graham cracker crust and cover with plastic wrap. Freeze until firm.

    6. This recipe doubles nicely. In fact, you may want to double this in order to fill the graham cracker crust better.



    Final Comments


    No one knows how many normal people this might serve because Alberta's greedy kids always ate it all.
