    List of Ingredients


    • 2 1/2 cups peeled & 1" diced red potatoes
    • 1/4 lare red bell pepper diced
    • 3 green onions including part of green top, sliced
    • 1 cup cooked ham cubed
    • 6 extra large eggs
    • 1/2 cup milk
    • 3-4 large slices Swiss cheese
    • salt & freshly ground pepper to taste
    • Canola oil for frying


    Instructions


    1. Pre-heat oven to 350 degrees. Heat approximately 1-2" canola oil in an ovenproof 10" non-stick skillet. When oil is hot add diced potatoes and salt to taste. Fry potatoes over high heat until they begin to brown.
    2. Add red pepper, onion & ham and continue to fry, turning from time to time, until potatoes are golden brown. Drain all oil from skillet and return to heat. Continue to cook mixture over medium-low heat to remove any excess oil that has remained in the pan.
    3. Beat eggs slightly with a whisk. Add milk and salt and freshly ground pepper to taste.
    4. Slightly flatten vegetables in the pan so they are in one layer. Pour eggs over vegetables and allow to cook over low heat for two minutes until bottom is set.
    5. Remove skillet from heat. Place slices of cheese on top of egg & vegetable mixture.
    6. Place skillet into oven and allow mixture to cook five to eight minutes until egg mixture is set and cheese is melted.
    7. Cool slightly in pan and turn out onto large plate. Cut into serving-sized wedges.


    Final Comments


    Leftovers can be refrigerated and re-heated in microwave.
