Garlic & Cranberry Pork Loin

List of Ingredients
- 1 3.5 to 4 lb boneless pork loin**
- 5-6 large cloves garlic peeled & sliced into thin slices
- Penzeys Ozark Seasoning
- 1 15oz can jellied cranberry sauce
- 1/4-1/2 light brown sugar
- Ocean Spray Cranberry Juice Cocktail
Instructions
- Cut small slits into pork and put a thin slice of garlic into each slit. Repeat until all garlic slices are used.
- Rub pork loin all over with Penzeys Ozark Seasoning.
- Wrap pork loin in plastic wrap and refrigerate overnight.
- Heat oven to 325 degrees. Pour cranberry juice cocktail to a depth of 1" into a braising pan or small roaster that has a cooking rack.
- Place pork loin onto cooking rack. Pat brown sugar over onto top and sides of loin roast. Spread approx 1/2 can or more of the jellied cranberry sauce over the top of the loin.
- Cover pan and cook in oven until internal temperature of roast is 180 degrees (approx 10 minutes per pound)
Final Comments
**This is better if the loin roast is not too lean.
