    Garlic & Cranberry Pork Loin

    List of Ingredients


    • 1 3.5 to 4 lb boneless pork loin**
    • 5-6 large cloves garlic peeled & sliced into thin slices
    • Penzeys Ozark Seasoning
    • 1 15oz can jellied cranberry sauce
    • 1/4-1/2 light brown sugar
    • Ocean Spray Cranberry Juice Cocktail


    Instructions


    1. Cut small slits into pork and put a thin slice of garlic into each slit. Repeat until all garlic slices are used.
    2. Rub pork loin all over with Penzeys Ozark Seasoning.
    3. Wrap pork loin in plastic wrap and refrigerate overnight.
    4. Heat oven to 325 degrees. Pour cranberry juice cocktail to a depth of 1" into a braising pan or small roaster that has a cooking rack.
    5. Place pork loin onto cooking rack. Pat brown sugar over onto top and sides of loin roast. Spread approx 1/2 can or more of the jellied cranberry sauce over the top of the loin.
    6. Cover pan and cook in oven until internal temperature of roast is 180 degrees (approx 10 minutes per pound)


    Final Comments


    **This is better if the loin roast is not too lean.
