Italian Sausage With Peppers & Onions

List of Ingredients
- 1 lb (or more) sweet Italian sausage links
- 5 large green peppers
- 5 large red peppers
- 2 large sweet onions
- 2 or 3 cloves chopped garlic
- Olive oil
Instructions
- Seed and slice peppers into 1/2" slices.
- Peel and cut onions into thin slices. Cut the slices in half.
- Heat olive oil in a large, deep sided skillet. Add peppers and onions, cover and cook until vegetables begin to soften.
- Move vegetables aside and add sausages and garlic.
- Cover and cook, turning sausages and stirring vegetables occasionally until sausages are brown on all sides and vegetables are tender.
- Dip vegetables and sausage from skillet with a large slotted spoon to drain.
Final Comments
Makes a great sandwich on a hoagie roll with mustard and a cool beer.
