Crockpot Chicken Fajitas

List of Ingredients
- 1 lb chicken breasts (either bone in or boneless)
- 3 bell peppers (your choice of color)
- 2 poblano peppers
- 2 medium yellow onions
- 2 cans diced tomatoes with juice
- 1 or 2 pkgs fajita seasoning (your choice of amount)
Instructions
- Wash, seed and slice peppers. Put sliced peppers into slow cooker along with 2 peeled and sliced onons.
- Place chicken on top of peppers and onions. Add canned tomatoes along with juice from can. Sprinkle fajita seasoning on top of chicken and tomatoes.
- Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours. (I prefer to cook chicken on high in a slow cooker so it will come to temperature more quickly)
- Serve with flour tortillas, shredded cheese, salsa, sour cream, etc.
