    Crockpot Chicken Fajitas

    List of Ingredients


    • 1 lb chicken breasts (either bone in or boneless)
    • 3 bell peppers (your choice of color)
    • 2 poblano peppers
    • 2 medium yellow onions
    • 2 cans diced tomatoes with juice
    • 1 or 2 pkgs fajita seasoning (your choice of amount)


    Instructions


    1. Wash, seed and slice peppers. Put sliced peppers into slow cooker along with 2 peeled and sliced onons.
    2. Place chicken on top of peppers and onions. Add canned tomatoes along with juice from can. Sprinkle fajita seasoning on top of chicken and tomatoes.
    3. Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours. (I prefer to cook chicken on high in a slow cooker so it will come to temperature more quickly)
    4. Serve with flour tortillas, shredded cheese, salsa, sour cream, etc.
