    Honey Baked Chicken Breasts

    List of Ingredients


    • 4 bone-in chicken breasts, skin removed
    • 1 cup flour
    • 1 tsp salt
    • 1/2 tsp pepper
    • 1 stick unsalted butter
    • 1/4 cup honey
    • 1/4 cup lemon juice, freshly squeezed
    • 1 Tlb soy sauce


    Instructions


    1. Rinse chicken under hot, running water & pat dry with paper towels.
    2. Prehet oven to 350 degrees.
    3. Shake mixture of flour, salt & pepper in a plastic food storage bag.
    4. Put chicken breasts in bag, one at a time, and shake to coat with flour. Remove from bag and tap chicken lightly to remove excess flour.
    5. Melt 4 Tbl of butter in a 9x13 baking dish. Roll floured breasts in butter to coat.
    6. Place breasts in dish in a single layer and bake for 30 minutes.
    7. Melt remaining butter in a saucepan and add remaining ingredients. Stir well to mix.
    8. Turn breasts over. Pour sauce mixture over breasts. Bake an additional 40 minutes, basting with sauce several times duing the final 40 minutes of baking.


    Final Comments


    Serves 4. Serve with curried yellow rice.
