Chicken Alfzzini

Recipe Introduction
A combination of tetrazzini and alfredo done in an electric pressure cooker.
List of Ingredients
2 lb boneless, skinless chicken breasts
2 15 oz cans mushrooms, drained
1 jar diced pimentos, drained
1 Tbl dried minced onion (or 1 medium onion chopped)
2 tsp Italian seasoning
Salt & pepper to taste (pressure cooker will intensify seasonings so do not over-salt)
4 cups chicken broth
1 10 ¾ oz can cream of mushroom or cream of chicken soup
12 oz elbow macaroni
8 oz pizza mix cheese
1 cup shredded Parmesan
6.3 quart or larger electric pressure cooker
Remove fat and silver skin from chicken and cut breasts into bite-sized pieces. Add to cooker insert and add remaining ingredients. Stir to mix all ingredients Attach lid and seal cooker. Set timer for 20 minutes(poultry setting plus 5 extra minutes). When finished chime sounds, carefully vent steam, remove lid, stir to mix well and serve. This will thicken upon standing a few minutes. (This fill fill a 6.3 quart pressure cooker up to the fill line. Do not overfill the cooker)
