    Recipe Introduction


    This recipe is for a 6 quart pressure cooker.


    List of Ingredients


    • 1 lb dried kidney beans, soaked overnight & drained
    • 1 cup onion, cut into 1" pieces
    • 1 cup green pepper cut into 1" pieces
    • 1/2 cup celery, peeled & sliced
    • 1 lb ham cubes
    • 1 lb smoked link sausage
    • 6 pieces bacon, diced
    • 3 cloves garlic, chopped
    • 1/2 tsp thyme
    • Salt & pepper to taste


    Instructions


    1. Saute bacon pieces in pressure cooker; add onion, green pepper, celery and garlic and cook for 8-10 minuts. Stir from time to time.
    2. Add remaining ingredients and cover with water so that there is 1" of water above all the ingredients. Do not overfill pressure cooker.
    3. Stir ingredients and bring to a boil. Cover with lid lid and put pressure regulator onto the lid. Bring to pressure.
    4. Once the pressure regulator begins to rock slowly, cook beans under 10 lbs pressure for 20 minutes.
    5. Remove from heat and bring pressure down slowly. When pressure is down, remove regulator and lid and cook uncovered for 15 minutes.


    Final Comments


    Serve with cooked white rice.
