Pressure Cooker Red Beans

Recipe Introduction
This recipe is for a 6 quart pressure cooker.
List of Ingredients
- 1 lb dried kidney beans, soaked overnight & drained
- 1 cup onion, cut into 1" pieces
- 1 cup green pepper cut into 1" pieces
- 1/2 cup celery, peeled & sliced
- 1 lb ham cubes
- 1 lb smoked link sausage
- 6 pieces bacon, diced
- 3 cloves garlic, chopped
- 1/2 tsp thyme
- Salt & pepper to taste
Instructions
- Saute bacon pieces in pressure cooker; add onion, green pepper, celery and garlic and cook for 8-10 minuts. Stir from time to time.
- Add remaining ingredients and cover with water so that there is 1" of water above all the ingredients. Do not overfill pressure cooker.
- Stir ingredients and bring to a boil. Cover with lid lid and put pressure regulator onto the lid. Bring to pressure.
- Once the pressure regulator begins to rock slowly, cook beans under 10 lbs pressure for 20 minutes.
- Remove from heat and bring pressure down slowly. When pressure is down, remove regulator and lid and cook uncovered for 15 minutes.
Final Comments
Serve with cooked white rice.
