Saffron Rice with Sun Dried Tomatoes

List of Ingredients
- 8 oz package saffron flavored rice
- 1/2 cup sun-dried tomatoes, cut into small strips
- 1/4 cup garlic falvored red wine vinegar
- 1/4 cup extra virgin olive oil
- 2 green onions, chopped
- 1 14.5 oz can chicken broth
- Grated Parmesan cheese (optional)
Instructions
- Soak sun-dried tomato pieces overnight in vinegar & olive oil mixture in covered container in refrigerator.
- Cook rice in chicken broth according to package directions. Drain tomatoes and cook along with the rice.
- When rice is cooked stir in chopped green onions. Add grated Parmesan cheese if desired.
