    Saffron Rice with Sun Dried Tomatoes

    List of Ingredients


    • 8 oz package saffron flavored rice
    • 1/2 cup sun-dried tomatoes, cut into small strips
    • 1/4 cup garlic falvored red wine vinegar
    • 1/4 cup extra virgin olive oil
    • 2 green onions, chopped
    • 1 14.5 oz can chicken broth
    • Grated Parmesan cheese (optional)


    Instructions


    1. Soak sun-dried tomato pieces overnight in vinegar & olive oil mixture in covered container in refrigerator.
    2. Cook rice in chicken broth according to package directions. Drain tomatoes and cook along with the rice.
    3. When rice is cooked stir in chopped green onions. Add grated Parmesan cheese if desired.
