Albacore & White Bean Salad

List of Ingredients
- 1 15 oz can Great Northern Beans, drained
- 1 Bag Starkist Fancy White Albacore
- 1 4 oz can chopped ripe olives
- 2 Stalks celery, peeled & chopped
- 3 Hard boiled eggs, chopped
- 1/2 Cup sweet onion, chopped
- 1/2 Cup canola oil
- 1/4 Cup balsamic vinegar
- Juice from 1/2 lemon
- Herbs to taste (Combination of Italian seasoning/garlic/lemon pepper, whatevr you like)
- Parsley
- Salt & freshly ground pepper to taste
- GARNISH
- Romaine leaves
- Grape or cherry tomatoes
- Parsley
Instructions
- Add all ingredients except oil & vinegar & garnish & Romaine to a bowl. Mix oil & vinegar & pour over salad. Refrigerate overnight.
- Serve on Romaine leaves & garnish with grape or cherry tomatoes & parsley.
- Serve with whole wheat breadsticks.
