Melon Vinaigrette

List of Ingredients
- SALAD
- 1 large cantalope or honeydew melon or a combination of the two
- 1 box cherry tomatoes, cut into half*
- 1 large English cucumber, peeled, seeded and diced
- 1 Tbl fresh parsley leaves, chopped
- 1 Tbl fresh chives, chopped
- 1 1/2 tsp dried mint flakes
- VINAIGRETTE
- 4 Tbl wine or balsamic vinegar
- Salt & pepper to taste
- 1/4 cup sugar (you may want to add a little more)
- 1/4 clove chopped garlic or a pinch of garlic powder
- 3/4 cup salad oil
- * Grape tomatoes may be used instead of cherry tomatoes
Instructions
- Cut melon into half and remove seeds. Scoop into medium-sized balls. Combine salad ingredients.
- Combine vinaigrette ingredients and whisk or shake well to mix.
- Add vinaigrette to salad and stir to mix. Chill 3-4 hours before serving.
Final Comments
This is pretty served from a soup tureen and is good eaten as a cold soup of sorts. Serve with hot herb rolls and honey butter.
