Potato Salad

List of Ingredients
- 2-3 lbs red boiling potatoes
- 6 boiled eggs, shelled and diced
- 1 16 oz jar sweet pickles, diced
- 1 large sweet onion, diced
- 3 ribs celery, strings removed, peeled and diced
- 1 Tbl yellow mustard
- 1 Tbl salt
- 1/4 cup pickle juice
- 1/4 cup sugar
- 1-2 cups mayonnaise
Instructions
- Cook whole potatoes in boiling water until they are tender. Drain and cool slightly. Peel and dice.
- While diced potatoes are still warm pour 1/4 cup pickle juice over them and stir. The warm potatoes will absorb the taste of the pickle juice more readily than will cold potatoes.
- Add remaining ingredients and mix well. Chill overnight for flavors to blend.
Final Comments
Several shakes of McCormick's Salad Supreme seasoning is also good in this salad. This makes one big gob of porato salad but it usually doesn't last long.
