Recipe Introduction
There are many versions of this recipe. Some call for meat and some do not. This is a meatless version.
List of Ingredients
- 1 large onion, diced
- 4 carrots peeled & diced
- 4 ribs celery peeled & diced
- 4 cloves garlic, peeled & diced (or to taste)
- 2 Tbl olive oil
- 1 tsp cumin powder
- salt & pepper to taste
- 4 cans (14.5 oz each) chicken or vegetable broth
- l lb lentils
- 2 bay leaves
- 2 15 oz cans diced tomatoes with juice
- 1 6 oz can tomato paste
- 1 8.8 oz bag Uncle Ben's brown ready rice
Instructions
- Heat olive oil in a heavy 5 quart Dutch oven. Add onion, carrots, celery, garlic, cumin, salt & pepper and saute over medium-high heat until onion is translucent.
- Add remaining ingredients except the rice. Turn heat to medium-low (more low than medium) and cover. Simmer, stirring every now and then for 45 minutes to an hour.
- Add rice and heat until rice is heated through. Adjust seasonings prior to serving.
