    Recipe Introduction


    There are many versions of this recipe. Some call for meat and some do not. This is a meatless version.


    List of Ingredients


    • 1 large onion, diced
    • 4 carrots peeled & diced
    • 4 ribs celery peeled & diced
    • 4 cloves garlic, peeled & diced (or to taste)
    • 2 Tbl olive oil
    • 1 tsp cumin powder
    • salt & pepper to taste
    • 4 cans (14.5 oz each) chicken or vegetable broth
    • l lb lentils
    • 2 bay leaves
    • 2 15 oz cans diced tomatoes with juice
    • 1 6 oz can tomato paste
    • 1 8.8 oz bag Uncle Ben's brown ready rice


    Instructions


    1. Heat olive oil in a heavy 5 quart Dutch oven. Add onion, carrots, celery, garlic, cumin, salt & pepper and saute over medium-high heat until onion is translucent.
    2. Add remaining ingredients except the rice. Turn heat to medium-low (more low than medium) and cover. Simmer, stirring every now and then for 45 minutes to an hour.
    3. Add rice and heat until rice is heated through. Adjust seasonings prior to serving.
