Split Pea with Ham Soup

Recipe Introduction
We eat this thick and hearty soup with "ham" salad sandwiches. It is a good winter supper.
List of Ingredients
- 1 lb green split peas
- 2 smoked ham hocks
- 1 large onion diced
- 2 large carrots diced
- 2 large potatoes diced
- 1 tsp thyme (optional)
- Salt and pepper to taste
- Water to cover
Instructions
- Rinse hocks under hot running water. Add all ingredients to a 4 qt stockpot or Dutch oven. (Peel the vegetables first). Add water to cover.
- Cover and cook over low heat, stirring occasionally, until peas and vegetables are tender (about 2 hours).
- Remove hocks from the soup and set aside to cool.
- At this point you can either run the soup through a sieve or whirl a few cups at a time in a food processor or you can chill soup and then remove any fat that comes to the top. After fat is removed, then process the soup to make it smooth.
- Remove rind from ham hocks and chop meat. Add chopped ham to the smooth soup.
- If soup is too thick, add some water or chicken broth to thin. Adjust seasonings and re-heat.
