    Split Pea with Ham Soup

    Recipe Introduction


    We eat this thick and hearty soup with "ham" salad sandwiches. It is a good winter supper.


    List of Ingredients


    • 1 lb green split peas
    • 2 smoked ham hocks
    • 1 large onion diced
    • 2 large carrots diced
    • 2 large potatoes diced
    • 1 tsp thyme (optional)
    • Salt and pepper to taste
    • Water to cover


    Instructions


    1. Rinse hocks under hot running water. Add all ingredients to a 4 qt stockpot or Dutch oven. (Peel the vegetables first). Add water to cover.
    2. Cover and cook over low heat, stirring occasionally, until peas and vegetables are tender (about 2 hours).
    3. Remove hocks from the soup and set aside to cool.
    4. At this point you can either run the soup through a sieve or whirl a few cups at a time in a food processor or you can chill soup and then remove any fat that comes to the top. After fat is removed, then process the soup to make it smooth.
    5. Remove rind from ham hocks and chop meat. Add chopped ham to the smooth soup.
    6. If soup is too thick, add some water or chicken broth to thin. Adjust seasonings and re-heat.
