    Garnet's Corn Casserole

    List of Ingredients


    • 1 stick of butter
    • 1 large onion, diced
    • 1 large green pepper, seeded and diced
    • 1 large red pepper, seeded and diced
    • 2 large eggs, beaten
    • 1 can whole kernel corn, undrained
    • 1 can creamed corn
    • 1 cup sour cream
    • 1 9 oz box of corn muffin mix
    • 1 cup grated Cheddar cheese


    Instructions


    1. Pre-heat oven to 350 degrees.

    2. Melt butter in a large skillet over medium heat. Saute onion, green and red peppers in butter until they are soft.

    3. Put all of the ingredients except the Cheddar cheese into a large crock and mix well.

    4. Butter a large casserole dish. Pour ingredients into the dish and top with the shredded cheese.

    5. Put a cookie sheet onto the oven rack. Put corn casserole dish onto the cookie sheet.

    6. Bake 30-40 minutes until casserole is puffy and browned on top and bubbly around the edges.



    Final Comments


    Serves 12 or more as a side dish. It's not low-fat but it's so good people don't care.
