Garnet's Corn Casserole

List of Ingredients
- 1 stick of butter
- 1 large onion, diced
- 1 large green pepper, seeded and diced
- 1 large red pepper, seeded and diced
- 2 large eggs, beaten
- 1 can whole kernel corn, undrained
- 1 can creamed corn
- 1 cup sour cream
- 1 9 oz box of corn muffin mix
- 1 cup grated Cheddar cheese
Instructions
- Pre-heat oven to 350 degrees.
- Melt butter in a large skillet over medium heat. Saute onion, green and red peppers in butter until they are soft.
- Put all of the ingredients except the Cheddar cheese into a large crock and mix well.
- Butter a large casserole dish. Pour ingredients into the dish and top with the shredded cheese.
- Put a cookie sheet onto the oven rack. Put corn casserole dish onto the cookie sheet.
- Bake 30-40 minutes until casserole is puffy and browned on top and bubbly around the edges.
Final Comments
Serves 12 or more as a side dish. It's not low-fat but it's so good people don't care.
